Oven-baked trout with herb cheese


Servings: 4 servings

Preparation time: 16 minutes

Ingredients

  • 4 portions of 150 g (1/3 lb) fresh trout fillet
  • Salt and pepper to taste
  • 60 mL (1/4 cup) herb cheese spread (such as Boursin)
  • Zest and juice of half a lime
  • 60 mL (1/4 cup) panko

Preparation

  1. Preheat the oven to 200 oC (400 oF).
  2. Place the trout on a baking sheet lined with parchment paper.
  3. Season the trout and spread 15 mL (1 tablespoon) of cheese spread on each fillet.
  4. Coat the fish in the zest, lime juice, and panko.
  5. Cook in the oven for 8 minutes or until cooked to your liking.
  6. Serve with the side of your choice.
