Chimichurri chicken
Chimichurri chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 30 mL (2 tablespoons) Irresistibles Dijon mustard
- Salt and pepper to taste
- 60 mL (1/4 cup) Selection vegetable oil
- 30 mL (2 tablespoons) lemon juice
- 250 mL (1 cup) parsley, chopped
- 15 mL (1 tablespoon) oregano, chopped
- 30 mL (2 tablespoons) mint, chopped
- 2 mL (1/2 teaspoon) red pepper flakes
- 1 garlic clove, chopped
- 2 scallions, finely chopped
Preparation
- Preheat the BBQ on high.
- Coat the chicken with the Dijon mustard and season with salt and pepper. Set aside.
- Combine the remaining ingredients in a bowl. Season with salt and pepper.
- Place the chicken on the hot grill and lower the heat to medium. Cook for 5 to 7 minutes on each side or until cooked through.
- Serve the chicken breasts topped with the chimichurri sauce.
