Chimichurri chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 30 mL (2 tablespoons) Irresistibles Dijon mustard
  • Salt and pepper to taste
  • 60 mL (1/4 cup) Selection vegetable oil
  • 30 mL (2 tablespoons) lemon juice
  • 250 mL (1 cup) parsley, chopped
  • 15 mL (1 tablespoon) oregano, chopped
  • 30 mL (2 tablespoons) mint, chopped
  • 2 mL (1/2 teaspoon) red pepper flakes
  • 1 garlic clove, chopped
  • 2 scallions, finely chopped

Preparation

  1. Preheat the BBQ on high.
  2. Coat the chicken with the Dijon mustard and season with salt and pepper. Set aside.
  3. Combine the remaining ingredients in a bowl. Season with salt and pepper.
  4. Place the chicken on the hot grill and lower the heat to medium. Cook for 5 to 7 minutes on each side or until cooked through.
  5. Serve the chicken breasts topped with the chimichurri sauce.
