Ham, Leek and Spinach in Patty Shells

Ingredients
- 30 ml (2 tablespoons) Selection butter
- 30 ml (2 tablespoons) Selection all-purpose flour
- 325 ml (2 1/2 cups) milk
- Salt and pepper (to taste)
- 1 ml (1/4 teaspoon) Selection ground nutmeg
- 5 ml (1 teaspoon) Selection garlic powder
- 10 ml (2 teaspoons) Selection vegetable oil
- 300 g (2/3 lbs) cooked ham, diced
- 1 leek, rinsed and minced
- 500 ml (2 cups) fresh spinach, coarsely chopped
- 250 ml (1 cup) Artisan Irresistibles Gouda cheese, grated
- 4 Selection patty shells
Preparation
- In a large saucepan, heat the butter with the flour on medium heat. Form a dough.
- Add 125 ml (1/2 cup) milk and whisk. When all is well incorporated, add the remaining milk. Whisk and bring to a boil. Season with salt and pepper, nutmeg and garlic powder. Let simmer for 2 minutes, then reserve on low heat.
- In a saucepan, heat the oil on medium heat and cook the leek and ham for 8 minutes, or until the leek is soft.
- Add the ham and spinach mixture to the sauce and increase the heat intensity to medium.
- Place a patty shell on each plate, garnish with the warm mixture and sprinkle cheese.
- Serve with seasonal vegetables.
