Grilled Cauliflower Indian Style Steaks, yogurt sauce

Ingredients
- 1 big cauliflower
- 15 ml (1 tablespoon) Selection curry powder
- 125 ml (1/2 cup) Irresistibles olive oil
- Salt (to taste)
- 7 ml (1 1/2 teaspoons) garam masala (optional spice)
- 2 garlic cloves, minced
- 180 ml (3/4 cup) Selection plain Greek yogurt or a plain yogurt-type, plant-based preparation.
- 1 grated mini cucumber
- 1/2 lemon for its juice and zest
- 30 ml (2 tablespoons) fresh mint, finely snipped
- Ground black pepper (to taste)
Preparation
- Make 4 slices of about 2 cm (1 in) from the center of the cauliflower. Set aside the remaining cauliflower for another recipe.
- In a bowl, mix the curry, oil, salt, garam masala and half of the garlic.
- Baste this preparation on each side of the cauliflower steaks. Let marinate for 15 to 20 minutes.
- In another bowl, mix the yogurt, cucumber, remaining garlic, lemon’s juice and zest and mint. Pepper generously. Keep refrigerated until ready to serve.
- Preheat the barbecue to maximum intensity.
- Once the barbecue grill is warm, place the cauliflower steaks on it. Reduce the heat intensity to medium.
- Cook for 8 to 10 minutes, turning halfway through cooking time. You can baste the marinade on them halfway through cooking time.
- Serve immediately with the yogurt sauce.
