Chicken croissant sandwich

Ingredients

  • 4 butter croissants
  • 750 mL (3 cups) cooked chicken, cut into small pieces
  • 60 mL (1/4 cup) herb cheese spread
  • 45 mL (3 tablespoons) Selection mayonnaise
  • Pepper to taste
  • 4 leaves of the lettuce of your choice

Preparation

  1. Preheat the oven to 180 oC (350 oF).
  2. Slice the croissants lengthwise but not completely, just enough to create an opening for the filling.
  3. Place the closed croissants on a baking sheet and warm up in the oven for 3 minutes.
  4. Meanwhile, combine the cheese, mayonnaise, pepper, and 15 mL (1 tablespoon) of cold water in a medium sized bowl. Add the chicken and mix thoroughly.
  5. Once out of the oven, divide the chicken mixture between the croissants. Add the lettuce and close the sandwiches.
  6. Serve with your favourite crudités.
