Cold shrimp salad with dill and cucumber

Ingredients

  • 300 g (2/3 lb) small, cooked shrimp
  • 2 celery sticks, chopped
  • 250 mL (1 cup) cucumber, diced
  • ½ red onion, chopped
  • 15 mL (1 tablespoon) fresh dill, roughly chopped
  • 30 mL (2 tablespoons) lemon juice
  • Zest of ½ lemon
  • 30 mL (2 tablespoons) Selection olive oil
  • Salt and pepper to taste

Preparation

  1. Roughly chop the shrimp. In a bowl, combine the shrimp, celery, cucumber, and onion.
  2. In another bowl, make the vinaigrette by combining the dill, lemon juice, zest, and oil.
  3. Add the dressing to the shrimp mixture. Season, mix, and refrigerate for 30 minutes.
  4. Serve on a bed of lettuce or with thin slices of baguette.
