Colourful quinoa salad (simple)

Ingredients

  • 750 mL (3 cups) cooked quinoa, cooled
  • 80 mL (1/3 cup) dried cranberries
  • 125 mL (1/2 cup) edamame
  • 125 mL (1/2 cup) shredded carrots
  • 250 mL (1 cup) bell pepper, diced
  • 2 scallions, finely chopped
  • Honey lemon vinaigrette
  • 60 mL (1/4 cup) Selection vegetable oil
  • 60 mL (1/4 cup) Selection vegetable oil 60 mL (1/4 cup) lemon juice
  • 60 mL (1/4 cup) lemon juice 22 mL (1 ½ tablespoons) Selection honey

Preparation

  1. In a large bowl, combine all the ingredients for the salad.
  2. In another bowl, combine all the ingredients for the vinaigrette.
  3. Pour the vinaigrette on top of the salad. Toss. Check the seasoning and serve.
  4. Combine all the ingredients for the salad. In another bowl, combine all the ingredients for the vinaigrette then season with salt and pepper.
  5. Combine both preparations and check the seasoning.
